The eggbutt is a standard jaw piece. The rings cannot move loose so that the aid comes through more directly and the bit is relatively still in the mouth. 

The mouthpiece with rings is a variant of the double-broken bit. The brass rings in the middle stimulate the horse to play with the bit. This increases the tongue activity so that a horse will produce more saliva and the jaws can relax more so that the horse is more likely to release in the mouth.

Sweet iron will rust when in contact with (air) humidity; the surface rust tastes sweet and naturally stimulates the saliva production. This will cause the horse to salivate more which will encourage the horse to take more contact. The process of rusting (oxidation) changes the blue colour of the TRUST-bit to a brownish-grey. A sweet iron bit will develop an orange-brown rust layer on the mouthpiece if it is temporarily not used. This is easily removed by wiping it off with a damp cloth.
